Hello everyone, it’s Hattie here 👋💕 and today I’m going to take you on one of my sweetest adventures in Tokyo: discovering A Happy Pancake (幸せのパンケーキ) — the most dreamy soufflé pancake café you’ll ever visit!

If you’ve been scrolling TikTok or Instagram lately, you’ve probably seen those wobbly, cloud-like pancakes bouncing on a plate 🥺✨. Well, I finally got to try them in person, and trust me, they’re even fluffier and more magical IRL.

But like every Tokyo trip, my story started with a little chaos (shopping too much 🛍️→ missing my reservation 😂). Let’s rewind.

I had originally planned to visit the Ginza branch of A Happy Pancake because everyone says it’s the prettiest. The vibes there? Chic, bright, and very Instagrammable ✨.

🌸 Finding A Happy Pancake in Omotesando

The next morning, around 10 AM we headed to A Happy Pancake Omotesando.

Most restaurants in Japan open after 11 AM, but this café is an early bird — meaning you can actually have a proper brunch! And during summer vacation (aka when Tokyo is packed with tourists), that’s a blessing from the pancake gods. 🙌

The Omotesando branch is located B1 floor of 清原ビル, and while it’s underground, the space is wide and cozy. Perfect for a slow morning. And I spotted so many of the cutest kids enjoying pancakes too 🥞👶💕

🍌 Banana Whipped Pancakes with Chocolate Sauce

First up, the classic. Three fluffy pancakes stacked high, topped with whipped cream and — yes — a whole banana 🍌. The rich chocolate sauce comes on the side, so you can pour as much (or as little) as you like.

The pancakes are warm and soft, like eating a sweet pillow 💤🥞. If you’re a chocoholic, this is your safe choice.

🍑 Seasonal Rosehip Peach Pancakes

Okay… THIS was the moment my soul left my body. The seasonal peach pancakes were made with Japanese white peaches, topped with a rosehip jelly that shimmered like a pink jewel ✨🌹.

The combo was out of this world. The peaches in Japan are already perfect (juicy, sweet, and never mushy 🍑), but the chefs at A Happy Pancake somehow made them even better. The rosehip jelly added a fresh, floral twist, and the side of tea powder helped cut through the sweetness (no sugar overload here 💕).

Sadly, this beauty is seasonal — probably only summer. Maybe next up will be strawberries 🍓

🐟 Salmon & Avocado Cheese Mousse Pancakes

Yes, savory pancakes exist! And honestly… this one surprised me. The warm soufflé pancakes were paired with raw salmon, avocado, and a creamy cheese mousse.

Sounds weird? Nope. It works. The pancakes used here are slightly less sweet, so they balance perfectly with the salmon. Each bite was soft, buttery, and just the right amount of “fancy sushi meets fluffy brunch.” 🍣🥞💖

My friend doesn’t usually enjoy sweet food, but she loved the salmon and avocado pancakes — so even if you’re not into desserts, you’ll still find something tasty here.

⏳ The Waiting Game (But Worth It)

Like most things in Japan, good food = patience. We did wait a bit for our order, but watching the staff carefully whip, bake, and plate each pancake was like watching an edible art show 🎨👩‍🍳.

By the time the plates arrived, my heart was already full. My stomach? About to be VERY full. (Three pancakes per plate… honestly, for one girl, it’s A LOT 😅. Sharing is caring, babes.)
